THE MIGHTY FATTOUSH
Come with me on a journey through time and space…to the world of The Mighty Fattoush.
Fattoush is a Middle Eastern salad that originated in Lebanon made from toasted leftover khubz (Arabic flat bread), or, more commonly, pita, combined with chopped greens and bite-sized veggies. The Mighty Fattoush is another highlight from my tapas-inspired Feast of the Seven Fishes for Christmas Eve 2012 and is made with a field of romaine, a bushel of cilantro, the bracing crunch of English cucumber, the mild bite of scallions and the capsaicin kick of jalapeno. I also add ripened avocado for creamy, richness and suffused this lush, emerald mead with a lime and honey vinaigrette. The star attraction to my fattoush however was not pita, nor khubz for that matter. I use Taco Flavor Doritos. Neither Lebanese nor Spanish for that matter, but, nevertheless, all good.

PREP/BAKE TIME: 15 Minutes
Makes 2 – 4 Servings
INGREDIENTS
2 Tb – Fresh Lime Juice
¼ Cup – Extra Virgin Olive Oil
1 Tbs & 1 Tsp – Honey
½ Tsp – Kosher Salt
½ Tsp – Coarse Black Pepper
1 Large Head or 2 Small Heads – Romaine Lettuce, Coarsely Chopped
2 Cups – Coarsely Chopped, Fresh Cilantro
1 English Cucumber, Sliced Thinly
1 Cup – Finely Chopped Scallions, Stems and Leaves
1 Large – Jalapeño, Seeded and Minced Finely
1 Large Ripened Avocado, Peeled, Pitted and Sliced
4 Oz (About Half Bag) – Taco Flavored, or Nacho Cheese Doritos
THE NITTY GRITTY
In a large mixing bowl, prepare dressing by whisking together olive oil, honey, lime juice, salt and pepper till emulsified. Add lettuce, cilantro, cucumber, scallion, jalapeño, avocado and Doritos; toss to combine. Serve and enjoy.
